Clean Eating: Raw Zucchini Pho with Garlic, Ginger and Shredded Poached Chicken
Inspired by Gwyneth Paltrow's "It's All Easy."

Vegetarian. Prep time: Under 30 minutes
4 cups organic, low sodium chicken stock
1 TBS organic tamari
1 bone-in, skin on chicken breast
1 tsp fresh grated ginger
3 garlic cloves, minced
Sea Salt to taste
1/2 small white onion, very thinly sliced
Juice of 1 lime
4 zucchinis, spiralized
Fresh cilantro sprigs (to taste - 1 per bowl)
1 small serrano chili, sliced
1 lime, sliced
Combine chicken stock, chicken, ginger, garlic, pinch of salt and 2 cups of water in a medium saucepan; the chicken should be just covered by the liquid. Bring to a boil, reduce heat to maintain a simmer, and poach the chicken for 10-15 minutes, or until cooked through completely.
Remove the chicken breast, shred the meat and return the rest of the carcass to the saucepan. Simmer on low for 30 minutes. Strain the stock, discarding the solids and return to the saucepan. Add the tamari, onion and lime juice. Add salt to taste.
Divide the sprialized zucchini and shredded chicken between 2 bowls. Ladle the hot broth into the bowls, and top with fresh cilantro, serrano chili and lime slices.
